Chicken and Boiled Carrots

Used the same lemon baked chicken recipe again...
With boiled carrots cooked in salt and butter.

The chicken came out dry. I didn't account for the fact that I was using chicken breast instead of bone-in chicken like last time. Bake time could have been reduced by maybe 10-15 minutes. Carrots came out slightly buttery and soft. They were nice.

"Salad" for me consists of spinach, cheese, and pear. 
It'd be good with a honey vinaigrette and without the cheese. Or maybe without the spinach.
